Meal Planning Monday

I tend to have a rolling list of our favourite meals so we don’t have the same things week in, week out but this week I’m going to be home early all week so will have a bit more preparation time to try out some new recipes.

  • Spring Greens & Goat’s Cheese Risotto (zero ratings so far eek)

EDIT: This was really delicious and simple to make but being a risotto not a dish that can be made in a hurry.  It took about 45 minutes from getting the pan out to eating time.  I’m not sure how healthy it was but it had a generous portion of spring greens per person!

  • Greek Lamb Tray Bake (minus the courgettes and using lamb steaks instead of patties)

EDIT: Another yummy dish.  I did the veg for 45 minutes and added the lamb for 15 minutes.  The mint didn’t really add much flavour actually so I’d put dried mint in from the start next time.  Served with salad with a balsamic vinegar and walnut oil dressing.  My husband was dubious about the Feta but he said it was quite refreshing with the lamb.

EDIT: Okay but the taste was a bit of a let down compared with the lovely smell of coriander and cumin seeds frying.  I probably wouldn’t make this again.
